The Guadiana Valley and its culinary influence

The gastronomic culture of the Guadiana Valley, in which the city of Durango is located, has been conditioned since its foundation by factors that have given it qualities that, over three centuries, have been maintained and have become part of the city’s cultural heritage.

 

The abundance of livestock, the recurrent isolation and the extreme climate are the factors that explain the deep-rooted tradition in the consumption of meat, both fresh and dried; the taste for dairy products, from the simplest jocoque, through the homemade roasts, as well as the fondness for aged cheese from the mountain valleys of the state, and more recently, the cheeses produced in the Mennonite colonies that in the first half of the 20th century settled in the state territory.

 

Or what to say about the homemade preserves that range from sweet to salty, jams, cajetas, tornachiles, dried fruits and vegetables, as well as dried chilies, among which the “chile pasado” stands out, an essential ingredient for the preparation of “Caldillo Durangueño”.

The preserves fruits and vegetables mentioned above, present in the houses of Durangueña, were once important to overcome the sieges that the city was subjected to almost from its foundation until the end of the 19th century. Since then, the traditional Duranguean cuisine has preserved its character and seasoning.
